Taking the cue from Ravagence, I decided to try a rose as well:

I'm not happy at all with the petals, but I don't know exactly what's wrong. They seem to lack depth, but I don't know how to fix it. Any suggestions?

Is there a reason you're using such intense colors? that bright red won't work as an AA for the green, and there's no depth because the blue and red are both so vibrant that they just sit on top of one another.

No reason other than "it's the mtPaint default palette" and I wanted to see if I could do it (*I* obviously couldn't :-P)
The red isn't really AA for the green, but there are some reddish-brown sharp edges on the leaves, if you zoom in on the ref. Those are what I was trying to draw.
You think I should add a darker red to the palette, then?
