AA is not a problem if every pixel is placed by hand. But the problem with your rock is that it looks more like a piece of clay rather than rock. Rocks are never in one, uniform color but from little to hard rough surface. Even if the rock is polished, it's surface is always a mix of more colors (conditioned by sediments, minerals,...).
