Hiya, after doing some little things with CC from other sources, I thought I should get back in here for a bit, to get help from people who actually know PA.

I'm currently working on a face:
Which has no mouth.

I am trying to work with planes, as I keep hearing this said when people work on faces, but I don't think I am grasping it too well.
So I was hoping someone here could explain the theory a bit better in relation to what I have so far?

Is (s)he looking down? If not, the proportions are a bit off. If so, you should modify the nose so it looks more like it's pointing down. And, er, the proportions are still a bit off, but less so!

have a look at these first:

they are designed for hand drawing but their methods are the basic groundwork that can be applied to all media.

I'm equally curious about that 'planes' thing, it could have several meanings and I don't know which one is intended yet...
One possibility is what you're trying: represent actual geometrical planes in space by evenly shaded patches.
I will help if you have a clearly defined light source: so far you have frontal light on the forehead and nose, top light on the eyes and cheeks, light from below on the chin.
Also, I think your outline is too soft, it might be more angular to better fit those planes, esp temples and cheeks; and making it mirrored is not a good idea, faces are rarely symmetrical, and light even more so.
