Did I miss a news item lately?  When did the gallery rating change to six dots?  Will this affect previously rated pieces... making a perfect 5/5 now an almost perfect 5/6?  Just curious... it's really early here and I'm sometimes a little slow to start in the morning so I may have missed something.

You must've leveled up. Leveling up allows you to give higher ratings. See also this.

To add more dots you'll have to revisit them, you can start with my gallery

See, now this is the kind of thing that makes me glad I wasn't drinking my coffee at the time or it would have come out my nose as I laughed.  I just may start at your gallery, I have to start somewhere.
