72 or 300?

What does everyone use?

I would think you could get a huge more level of detail out of 300dpi, but more pixels involved.

dpi makes no difference when creating pixel art; it's how many pixels there are in one inch when printing.

Right, I was aware of that.
 
However, to clarify my question a bit more:
 
At 100x100 at 72 dpi, vs 100x100 at 300dpi, there are clearly more pixels to be placed (this is obvious)
 
So, the resultant piece would then be easier to detail I would think? or does PJ only reccommend us use 72dpi?

No, there is no difference on screen. As you said yourself, 100 pixels at 72 dpi is the same as 100 pixels at 300, 600 or 1,000,000 dpi. All of them have 10,000 pixels to work with.

You only do pixel art if you expect the result to be watched on a medium where  the individual pixel can be (easily) distinguished at the naked eye, either because of it's native resolution (iphone3, computer screen resolutions up to 640), or voluntarily zoomed out by an integer factor (x2, x3, etc)

Always 72.
If you should need a higher res for printing, scaling or whatever else then you interpolate up as needed for a given project from the original 72, as a copy.
