Pretty straight forward.
But I am including the Game Boy Advance.

Was watching a video games that you might have missed.

Due to the game boys and its predecessors screen sizes / amount of pixels on the screen, I would think all Game Boy games are pixel art?

No, because many games use art created in higher resolution (regular drawings and digital art, photos, videos and 3d-models) and then downscaled using automatic tools (not redrawn in pixels from scratch). On PJ art considered pixelart if it's made mostly pixel-by-pixel without using of automatic anti-aliasing, smudge, blur, gradients and such. And with brushes that don't give artifacts on the edges (color must be exactly of the same concentration on the edges as in the center).
