Just don't worry about the rice texture so much, you could probably even do the rice as a solid color. It would still be readable because of the sushi on it :D
I can't paint rice part :/ I'll make a sushi set and I'll work on rice part :)
I love sushi! I think this is lacking a little of contrast, and some lighting on the rice part.

the shrimp looks like its been around an egg of rice. It should be on top. So the front of the rice needs more depth.
Also whats that random thingy (i guess its three three's, but what does that mean?) on the bottom?
