Well, personally I'd recommend starting smaller. The less pixels, the more control you have over them. And about colour count, 12-16 tends to be a good ammount if you can effectively pick them (Again, if you can do it with less, the better). I suck at it myself, but it's a matter of practice.
Try to pick colours that aren't too close together in hue/saturation, and which work well with others in your palette.
AA (Anti-aliasing) is a good technique to avoid all those "jaggies" and broken lines caused by the squares.
Dithering is really tricky to get used to. Always try to see if it's actually working as intended (smoothing out transitions), or if it only adds noise. Then again, maybe its purpose is adding a texture.
So, it's all relative. Experiment and have fun, you'll keep improving all the time.
Thanks for the feedback, I beleive what Franuka said is correct, the art style was not really intentional and could be cleared up a bit. I'm still learning the basics of dithering so that's probably why it looks a bit messy (that and the stray pixels haha).
I don't feel demoralized at all, this is the kind of feedback which i'm looking for.
Is there any tips you guys could provide, I'm, impressed of the skill you guys both wield.
What canvas size would you guys normally use? and how many colours would you limit yourself to?
In contrast to what Franuka said. I actually like the art style for this since it correctly portrays Artorias at the time the player encounters him. The guy has been corrupted by the Abyss and both his armor and soul has been left in tatters.
I believe it's too messy and washed out. Might be part of the texture, but the dithering and stray pixels cause this sketchy feel. Maybe some AA could help. Try adding some contrast to your colours too.
Oh, and I think legs should be a little longer (waist line is too down). Feet position could use some revising too.

As an avid darksouls fan (to put it mildly) i have to say i love this work =p
The dithering really gives him that "corrupted by the abyss" feeling, though i'm not sure you're actually trying to depict him in that state. My eyes are a little distracted around his waist, i feel like that could use some cleaning up/clarification, maybe a bit of change in contrast/texture.
