I'm not exactly sure what resolution should be used for a general mockup. I think it would depend on the console/platform that is being emulated, but what if you don't have a specific platform in mind?

I am planning on creating at least one mockup, since they are one of my favorite uses of pixel art, but I don't know what resolution or screen dimensions to use. I hope this is clear and easy to understand. Thanks!

Do whatever you like!

Most screens are horizontal (just like your eyes) with exceptions for mobile phones. You could take something from these lists

Or make up something you like yourself!

I bet all these sizes could make great mockups.

Or, just create some sprites, some tilesets, whatever you like. Then create a composition out of those, and once you are done crop your canvas and you have a nice sized mockup :D
